Many times on the Eastern shore of Maryland Ollie would stop in tiny road side restaurants along the way and find this delicious item on the menus.
Chicken and Waffles 
Ingredients: 
2 tbsp butter
1 small onion, diced
4 stalks celery, diced
4 cups chicken stock
1 bay leak
4 boneless whole chicken breasts
12 waffles
4 tbsp flour
