Carne Yuma
This is a spicy beef dish that is served in different parts of Mexico. Each region prepares it a bit differently.

Carne Yuma
Ingredients:
2 pounds chuck roast, cubed
4 tbsp flour
2 tbsp vegetable oil
1 large onion, chopped
1 cup celery, chopped
4 jalapeƱos, cleaned and chopped
2 1/2 cups beef stock
2 tbsp tomato paste
1/2 tsp ground cumin
2 tsp chili powder
Directions:
Preheat oven to 350 degrees.
In a paper bag, place flour and beef cubes and shake well to coat.
In a dutch oven, heat oil to a high heat and add beef to brown quickly.
Reduce heat and add remaining ingredients. Bring to just under a boil and remove from heat.
Cover with a lid or foil and place in oven for 2 hours.
May be served over rice or with tortillas.
