Pumpkin Chocolate Chip Cake
Thanksgiving dessert blues?
This is a variation on an older recipe to perk up dessert interest again.
Pumpkin Chocolate Chip Cake
Ingredients:
3 1/2 cups flour
1 1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
3 cups sugar
2 tsp baking soda
1 cup oil
1/3 cup water
4 eggs, whipped
1 16 oz can pumpkin
1 12 oz pkg chocolate chips
Topping
1/3 cup butter
2 cups powdered sugar
1 1/2 tsp vanilla extract
4 tbsp hot water
Directions:
Preheat oven to 350 degrees.
In a large bowl, sift together flour, salt, nutmeg, cinnamon, sugar and baking soda.
In a separate bowl, combine oil, eggs, and pumpkin. Mix well.
In the center of the dry ingredients, make a hole and add liquid mixture and the chocolate chips. Stir together to combine.
Grease an 11 x 9 cake pan, and pour batter in. Bake for 45 to 55 minutes or until cake tester comes out clean.
Prepare topping by heating butter in a small saucepan. Once butter begins to brown, add powdered sugar and vanilla extract. Stirring constantly, add hot water until desired consistency is reached.
Drizzle over cooled cake and allow topping to harden.
