Nick’s Famous Ribs
Ollie spent a number of years working in resorts and would go out of his way to get his hands on a plate of these ribs. Finger Licking Good doesn’t begin to sum these up.
Nick’s Famous Ribs
Ingredients:
Rib Rub
2 cups light brown sugar, packed tight
1 cup kosher salt
3/4 cup white sugar
1/2 cup garlic powder
1/4 cup chili powder
1/4 cup lemon pepper
1/4 tsp onion salt
1/4 cup celery salt
2 tbsp black pepper
2 tbsp celery seed
1 tsp crushed cloves
1 tbsp cayenne
1/2 cup Mrs Dash Original Blend
1/4 cup salt
Ribs
2 5 pound packs spare ribs
1/2 cup Italian dressing
1/2 tsp black pepper
1/2 cup light brown sugar, packed
1 cup minced, dry onion
1 cup of the rib rub
1 20 oz bottle Kansas City BBQ Sauce
Directions:
Mix all rub ingredients together. Keep unused rub in an air tight container.
The night before cooking, place ribs in a large plastic bag and pour Italian dressing over them. Remove after coating and wipe excess dressing off.
Sprinkle ribs with pepper, 1/4 cup brown sugar and 1/2 cup minced onion.
Wrap each rack of ribs in plastic wrap and chill over night.
Prior to cooking, the next day, remove ribs from wrap and wipe ribs again. Coat front and back with rib rub and massage into meat. Cook over a low heat maintaining about 200 to 250 degrees. With charcoal, add more every hour as needed. With gas, maintain low heat and use a hickory wood chip smoker.
After around 3 hours, remove ribs from heat and wrap in foil. Hold in covered grill for 2 hours or until tender.
Remove from foil, place ribs on grill and cover with BBQ sauce. Allow heat to caramelize sauce.
Grab a roll of paper towels and chow down.
