Mom’s Pork Chops
Mom was a simple cook. I think the only other spices other than salt and pepper was celery seed and some allspice.
But, she made miracles with those few things.
I especially liked her fried pork chops. Simple, yet understated.
Mom’s Pork Chops
Ingredients:
1 cup vegetable oil
1/2 cup flour
1/2 tsp seasoning salt (Ollie’s addition)
salt and pepper to taste
4 3/4 inch pork chops
Directions:
Heat oil in a large shillet over medium heat. Mix flour with spices in a paper or plastic bag. Add pork chops and shake to coat.
When oil sizzles, shake off excess flour and fry chops for about 4 to 5 minutes on each side, until golden brown on the outside and juices run clear.
